CHINESE CHICKEN SALAD (serves four)
2 1/2 tablespoons hoisin sauce
1 tablespoon soy sauce
1 tablespoon dry sherry
4 whole large chicken breasts, skin intact
Peanut oil for browning
1/2 teaspoon Oriental sesame oil
1/4 cup finely chopped peanuts
1/4 cup toasted sesame seeds
1/2 cup finely chopped green onions
1/4 pound rice stick noodles(fry as directed on package)
1 head iceberg lettuce, shredded
Fresh cilantro sprigs for garnish
1. Combine 1 tablespoon of the hoisin sauce with soy sauce and sherry.
2. Marinate chicken breasts in mixture for 30 minutes.
3. Brown marinated breasts in peanut oil, cover, and cook for 15 minutes or until chicken is tender. Skin should remain crisp.
4. Cool chicken meat, then shred it. Cut skin in julienne.
5. Combine with remaining hoisin sauce, sesame oil, 2 tablespoons of the peanuts, 2 tablespoons of the sesame seeds, and green onions.
6. Toss mixture lightly with 2/3 of the fried rice stick noodles.
7. Place shredded lettuce on a serving platter, mound chicken mixture on top, and sprinkle with remaining fried rice stick noodles, peanuts and sesame seeds.
8. Garnish with the cilantro sprigs.
